Hummus | Vegetarian/Vegan Recipe


Serves 2



Canned chickpeas 400g (large can)
Lemon Juice 60ml
Garlic crushed 1 clove
* Sesame oil 40ml
Salt and white pepper To taste
Paprika To serve
Cumin seeds To serve
Sesame oil To serve



  1. Drain the chickpeas and blend until smooth with the lemon juice
  2. Stir in the garlic and sesame oil, do not blend these in
  3. Season with the salt and pepper and add water if the hummus is too thick
  4. Let the hummus sit for at least an hour before you adjust the seasoning to allow the flavours to infuse
  5. Toast the cumin seeds in a hot dry pan, be careful as they can quickly burn
  6. Top the hummus with the oil, paprika and seeds and serve

* You can use tahini in place of the sesame oil for a thicker creamier result

Great served as an accompaniment for any of our filo pastries with a couple of slices of pitta bread.
